Papas a la Huancaina

10 medium potatoes (new potatoes are best)
1 pound feta cheese
2 small hot peppers
1 cup evaporated milk
1/2 cup vegetable oil
2 cloves garlic
8 saltine crackers
1 tsp. prepared mustard
salt and pepper
lettuce
3 hard cooked eggs
black olives

Cook and peel potatoes and allow to cool.
In a blender, blend the cheese, peppers, milk, oil, garlic,
crackers, mustard, salt and pepper. The sauce should be fairly
thick; add crackers if not thick enough, add milk if too thick.
Lay a bed of lettuce in a serving dish and place the potatoes
on top. Cover with the sauce. Cut the hard boiled eggs in half
and place on top of the potatoes. Add black olives if desired

Nachos Supreme

Makes 6 servings

An all-time favorite on everyone’s list. This is easy to make in the microwave as well. To bulk up these nachos, try adding some refried beans, cooked ground beef, chilli, or green pepper. You can also try a variety of cheeses. The possibilities are endless.

of a 10-ounce (284 g) bag baked tortilla chips
cup (60 ml) sliced black olives
cup (60 ml) chopped onion
cup (125 ml) salsa
1 cup (250 ml) shredded low-fat cheddar cheese

1. Preheat the broiler.

2. Spread the tortilla chips evenly on a cookie sheet. Sprinkle with the olives and onion, then spoon salsa over all. Top with cheese.

3. Broil for about 2 minutes, or until the cheese is melted.

English Muffin Pizza

Makes 2 servings

This recipe is even easier to prepare in a toaster oven.

2 tablespoons (15 ml) tomato sauce
1 English muffin, split in half
Oregano to taste
cup (60 ml) shredded low-fat mozzarella cheese
2 black olives, sliced

1. Preheat the oven to 350F (180C).

2. Spread the tomato sauce evenly over the English muffin halves. Sprinkle with oregano and cheese. Top with the olives.

3. Place on a cookie sheet and bake for 5 minutes, or until the cheese is melted.
